I've never even ended up with a broken yolk before. I almost always strap them down with the webbing on the top of my panniers as shown. This might give them a little extra shock absorption. Back when I was using the Banjo Bros. panniers, the eggs would go inside the bag with everything else. Eggs are pretty resilient in those cartons.
